Hokey Pokey

Beccy made this while I was staying with her; I managed to try a couple of pieces and I can see why it disappears as soon as it is made! It is really the home made version of a Crunchie bar and is so easy to make.
Recipe:
2 tablespoons golden syrup
4 tablespoons castor sugar
Mix in a pan then heat until it bubbles and is golden brown.
Take off heat and add 1 teaspoon bicarbonate soda
Pour onto non stick surface and leave to set.
When cold break and coat with choc. (if desired)
I'm sure Beccy will correct me if I've got this wrong!
If anyone tries it let me know if you liked it- I warn you it's not good for the waist line!!
Postscript: Beccy's comment-
I just want to reiterate that you stir the sugar and golden syrup before you heat it. Once you start heating it you are only allowed to shake the pan. According to Nigella this is the most important thing when making hokey pokey.
Also let it bubble for a bit, the trick is in stopping just before it burns. My first batch was a disaster (as are most peoples) but with a bit of practice I got the hang of it.

Ohhhh...yum! I think we used to make that when we were kids but we called it 'cinder toffee' if my memory serves me...which it may well not do! ;o)

I used to make that all the time when I was a kid - remember the mess in your kitchen?
sam now you have reminded me I think I do recall but why is that Beccy makes no mess at all!!
