Chocolate Muffins
This recipe for chocolate muffins is one of Beccy's. It really makes 12 muffins but I put less mixture in the muffin cases so I made 18 and they looked more like little cakes than muffins. I made them very quickly just before I went fishing so that I could take some with me. Given more time I would have decorated the top with some melted choc. I have to say I thought they tasted better a couple of days later when they were more moist.
I was also using my new mixing bowls, a real 'steel' 3 bowls for less than £10 ($20)!!
Recipe:
Makes 12
6 oz marg
6 oz castor sugar
3 eggs
8 oz SR flour
2oz cocoa powder (if not using cocoa powder add 2 oz more of flour) + 4 oz choc chips( white choc gives a nice contrast) OR fruit
1 tsp vanilla essence (if fruit only being added)
1 tsp baking powder
1/4 pt milk
Method
blend marg and sugar add
beat eggs and vanilla
sift flour, cocoa powder, baking powder and fold in
Stir in milk (+choc chips or fruit)
bake approx 15 mins Temp 190 C.
Ideal if you want something quick when the kid's friends come to play.

Firstly I only use fruit if I substitute the cocoa powder for flour.
Secondly I use white chocolate in my cocoa muffins...mmmmmmmmm delicious.
I would never put melted chocolate on top. I also use the electric beater.

I can't believe you still use marg - that godawful unnatural stuff invented by the French.
Please switch to butter - it's butter for you. It's a natural food, and therefore better to feed your family and friends than something full of unknown stuff that has been whipped up in a factory.

sam I copied the recipe ( as written) and I do mostly use butterin my cooking but on this ocassion I actually didn't.

Sam butter costs about 10 times the price of marge. I couldn't afford to do all the baking I did if I used butter only. I cook with marge and we eat with butter.
Mum, I probably gave you a shorthand list and explained re: the flour, seeing as you taught me that. It's just that fruit chocolate muffins sounds horrible. I also thought you knew I used white chocolate. It doesn't matter what you use but the white makes a nice contrast.
OOH!!! I am going to make these.
My son's kindergarten class has designated snack days for parents and ours are coming up. I want to do something different than the traditional "cheese and crackers". I normally bring blueberry muffins -but I'm almost out of blueberries from the freezer. Time for chocolate!!!!!

I've tried that with typepad, but to no avail.
We can get margerine here with no trans fats, etc. We eat that and I bake with butter.

seriously? ? butter costs 10 x as much as marg??
Sam, maybe I exaggerate more than a bit but I buy a huge block of Marge for cooking, lasts a few weeks costs less than €3. That much butter would cost me €9 plust the butter I but for eating. I cannot justify spending a 15th of my budget on butter only.

lisa I tend to use marg for cooking when the butter is hard and I need to be quick.
