Cauliflower, Bacon and Potato Bake

I had several packs of bacon to use up and after seeking suggestions from my friends on 'plurk' I made this very tasty bake.

Method:
Cauliflower cooked and chopped
Bacon grilled then broken into pieces
Potatoes par boiled and sliced
Cheese sauce.

Layer ingredients, top with cheese sauce, sprinkle with grated cheese and bake. Very simple!

It is not a chef's masterpiece but it makes quite a tasty dish. Of course far too many calories, but who cares once in while, I seem to remember saying this before! Beccy has already tried this dish and enjoyed it, and Embee had a clean plate, so these are good recommendations!

If you are every stuck for a supper dish give it a try.

Question, Ms. Cellania. How much of each ingredient? And do you make the cheese sauce?

Hi Petra I do make my own cheese sauce.

Now as I wasn't following a precise recipe I just guessed. It depends on the amount you want to make. I was using up a lot of bacon and made a large bake (6 portions approx) I actually had 18 rashers(slices of thin bacon)about 6-8 large potatoes. The cheese sauce was made with Farmhouse cheddar which is a strong English cheese. Again I just guessed the amount of sauce but you could use a standard cheese sauce recipe( I always put more cheese to make it extra tasty (sure to be plenty on line) or even buy a ready made sauce. I'm not really being very helpful because I didn't measure anything. Sorry.

Petra - Cheese sauce I make

melt a good knob of butter (1 oz+)
add spoonful plain flour (again 1 oz+)
stir together with wooden spoon slowly add milk (more than half pint) stirring all the time(to prevent going lumpy) stir while thickening add more milk as necessary(so it's a coating consistencey). Then add grated cheese and stir until all melted and hey presto it should be OK.

That looks so good - but do you know what?

Since I don't like bacon, I might put in bits of ham instead.

Hi Chris: I dropped by to say hi! Cauliflower dish looks delicious. You mentioned something about "plurking"? Oh I have been away for too long. Must go and ask Marnie about plurking.

I added onions as well, it was very tasty.

Handy tip: If you use a whisk (instead of wooden spoon) making the sauce it will never be lumpy.
